Barbecue Stuffed Potatoes with The White Sauce!

Who else runs out of ideas of what to cook for supper? Well, It's The White Sauce to the rescue! We don't just want you to buy our sauce; we want you to use and LOVE our sauce! So we are here to keep you inspired and informed about ALL THINGS....The White Sauce!

The White Sauce is so versatile and is so much more than just a barbecue sauce. Lots of recipes and ideas will be coming your way, but we had to start somewhere. So today we have Barbecue Chicken Stuffed Baked Potatoes. These are salty and sweet and creamy with a little crunch from sauteed peppers and onions. This is comfort food at it's finest! Perfect for a summer picnic in the backyard or in the winter sitting by the fire. This is a quick go to for our family. We make this with both red barbecue sauce and The White Sauce. We use Sweet Baby Ray's, but you make it your own with your fave! 

Barbecue Chicken Stuffed Baked Potatoes                                                                    Feeds 4-6 People

4-6 potatoes                                                                                                                      3-4 chicken breasts                                                                                                        Olive Oil                                                                                                                            Salt to taste                                                                                                                    Pepper to taste                                                                                                                  2-3 Onions                                                                                                                          2-3 red, yellow, or orange bell peppers                                                                        Sliced Fresh Mushrooms or Drained, canned sliced mushrooms                                  1 bag shredded Cheddar Cheese                                                                                    Sour Cream                                                                                                                Butter                                                                                                                            Favorite Red Barbecue Sauce (I love Sweet Baby Ray's)                                            The White Sauce

Directions: Place Chicken breasts on a baking sheet. Rub with olive oil, salt and pepper and bake at 450 for 15-18 minutes depending on thickness. Cook potatoes in microwave until fork tender. Set chicken aside and let rest. Slice onions, peppers, and mushrooms if needed. Saute either all together or separately if you prefer until they are slightly browned and translucent. Set aside. Pull chicken apart and toss in red barbecue sauce, you may need to reheat it a bit once you add the barbecue sauce if the sauce was cold.

Now is the fun part! Assembly! Everyone has a different technique, and there is no wrong answer. Put it all together, top it off with The White Sauce and enjoy!!

 I like to add Frank's red hot to my potatoes. Maybe you want to substitute the baked chicken with your favorite barbecue! The possibilities are endless!
